POTATO SKINS

large baking potatoes, baked at 350 until tender.
(batter)
2 eggs
1 cup ice water
1 cup all purpose flour
Cut baked potatoes
in half and scoop out most of the *flesh leaving a thin layer on
the skins. Now cut in half again.
Make batter by combining eggs and ice water in a bowl. Sift flour
over all & mix briefly – batter should be a little lumpy.
Drop potato skins into batter. Pull each one out and let some of
excess drip off. Place immediately into deep fryer with vegetable
oil pre-heated to 375 degrees. Fry til golden brown. When cooked
to your liking, place upside down on a sheet of foil covering a
cookie sheet and keep warm in oven. Make sauces.
