- 16 ounce hunk of Cheddar/Jack
12 honkin’ huge jalapeno peppers, washed, seeded and side-split
12 - Thin sliced and lean bacon strips
Cut hunk of
cheese into 12 equal rectangular pieces. Fit one into each jalapeno
using the split side being careful not to damage pepper. Wrap bacon
in a spiral around each pepper and secure with toothpick. Place
on super hot grill for about 2 minutes a side. You’re looking
for the bacon to crisp before cheese melts onto grill.
