CHICKEN,
MINT & CUCUMBER SKEWERS WITH GREEN ONION SAUCE
Assemble
these one day in advance, cover with a damp paper towel then a layer
of plastic wrap & stick em in the fridge…
Dressing
3/4
cup low-fat mayonnaise
1/3 cup low-fat buttermilk
3 T. chopped green onions
1 T. chopped fresh tarragon
1 T. chopped fresh dill
2 t. white wine vinegar
Place
Dressing ingredients in a blender & process until smooth. Cover
and chill.
Cucumber

small cucumber
Cut cucumber
lengthwise into 4 pieces, cut each piece crosswise into 6 quarter
inch slices.
Chicken
1/2
lb. Skinned, boned chicken breast
Cut into 24 three quarter inch pieces
Bring
3 cups of water to a boil in a medium saucepan. Add Chicken, cook
about 4 minutes or until done, then drain well and cool.
Thread 1 chicken
piece, 1 cucumber piece and a fresh mint leaf onto a skewer, repeat.
Cover and chill then serve with dressing. Makes 12 skewers, serving
size-2 skewers. |
