SPINACH-FILO

medium onion, diced
4 T. butter
3 pounds fresh Popeye spinach, washed & boiled for 5 minutes,
then well-drained
2 cups cottage cheese
1 cup grated fresh Parmesan
8 eggs, beaten
Salt and Pepper to taste
1 1/2 - 2 1/2 cubes butter
1 pkg. (16 oz.) phyllo leaves
Saute onion
in 4 Tablespoons butter until golden. Add spinach and saute for
5 minutes. Put in large mixing bowl and let cool. Add cheeses and
eggs; salt and pepper to taste. Melt butter cubes. Place one leaf
of filo on flat surface and brush with butter; repeat until you
have five layers of dough in the stack. Spread 1-1 1/2 cups spinach
mixture on filo stack; roll up beginning with short side. Place
on buttered baking dish; repeat until all filo and filling are used.
Bake at 350 degrees for 50-60 minutes, until golden brown. Slice
to serve. (May be frozen before baked.)
