CRANBERRY
NUT MUFFINS
¼ cup shortening
¼ cup sugar
1 egg
1 t. grated orange rind
1 cup bran
1 8-oz. can whole cranberry sauce
½ cup chopped walnuts
½ cup milk
1 cup all-purpose flour, sifted
1 T. baking powder
½ t. salt
3 T. sugar
½ t. cinnamon
Grease a 12-cup muffin pan. In a large mixing bowl cream together
the shortening and ¼ cup sugar. Add eggs and mix thoroughly,
then throw in the orange rind, bran, cranberry sauce, chopped walnuts,
and milk. Blend together until well mixed. Set aside.
In a separate bowl, sift
together the flour, baking powder, and salt. Pour the dry ingredients
into the cranberry mixture, blending until just moistened. Pour
the batter into prepared muffin pan.
Mix together
the remaining sugar and cinnamon. Sprinkle sugar mixture over the
batter and bake at 400 degrees for 20 minutes, or until a toothpick
inserted in the center muffin comes out clean. Enjoy!
