HAM
AND CHEESE MUFFINS
2 cups self-rising flour
1 cup milk
½ cup finely chopped ham
½ t. baking soda
½ cup mayonnaise
½ cup shredded Cheddar
Combine flour
and soda in large bowl. Combine remaining ingredients in separate
bowl; pouring into flour mixture until just moistened. Fill greased
muffin cups 2/3 full. Bake at 425 degrees for 16-20 minutes.
Beautiful served
warm and slathered with butter or as a mini lunch-open-faced &
topped with cream cheese or spicy mustard. Yum!
