PEACH MUFFINS

cups brown sugar, firmly packed
2/3 cup light vegetable oil
1 egg
1 cup sour cream
1 tsp. baking soda
1 tsp. vanilla extract
1 tsp. salt
2-1/4 cups flour
1-1/2 cups mashed but still chunky peaches
3/4 cup chopped nuts
cinnamon-sugar
butter
Mix sugar, oil,
and egg in a bowl. In another bowl mix sour cream, salt, vanilla,
and soda. Combine contents of both bowls together & lightly
blend in flour being careful not to overmix. Fold in mashed peaches
and nuts. Pour into muffin tin and sprinkle with cinnamon-sugar.
Top each muffin with a small bit of butter and bake at 325 degrees
for 30 minutes. Extra rich & moist – a perfect lunchbox
