SWEET
POTATO ROLLS
Pre-heat
oven to 450ºF
¾
cups mashed sweet potatoes
½ cup melted butter
½ cup milk
1 ½ cup flour
1 teaspoon pumpkin pie spice
1 tablespoon baking powder
½ teaspoon salt
Combine
first 3 ingredients in large bowl. Sift flour, pumpkin pie spice,
baking powder and salt together and add to sweet potato mixture,
blending well. Roll dough ½ inch thick on floured surface;
cut with 2 inch biscuit cutter. Place on lightly greased baking
sheet. Sprinkle with Cinnamon Sugar if desired. Bake on top rack
for 12 to 15 minutes or until brown. Delicious with Pecan Honey
