CORN BREAKFAST SCRAMBLE
3 T. olive oil
¾ cup small diced sweet onion
3 T. chopped shallots
¾ cup diced ham (or crispy fried bacon if desired)
2 ½ cups fresh corn kernels
2 ½ cups chopped fresh spinach
10 eggs
½ cup grated Parmesan
Salt and pepper to taste
Heat olive oil
in large skillet; add onion and sauté until translucent,
stirring often. Add shallots and ham; stir for one minute then add
corn and cook 4-5 more minutes longer stirring a few times. Stir
in spinach and cook until wilted.
Beat eggs with
grated Parmesan and add to corn mixture in skillet; stir gently
when eggs begin to set. Continue until eggs are the right consistency
for your tastes. Season with Salt and Pepper. Can add red pepper
flakes or hot sauce to pep up this tasty day-starter! |
