ROAST BEEF

lbs medium deli roast beef, cut into 1/2-inch cubes
3 lbs small red potatoes, parboiled & cubed
1 cup sweet onion, diced fine
1 red sweet bell pepper, diced
1 green sweet bell pepper, diced
Salt & pepper to taste
4 T. olive oil
Using a large
cast iron skillet, saute roast beef , potatoes, onion, bell peppers,
salt & pepper in olive oil until done.
Divide hash
onto serving plates and top with an egg cooked to your liking (poached,
over - easy, scrambled, etc.). Pretty it up with a spoonful of hollandaise
or salsa and sprinkle chopped fresh parsley over all. Beautiful!
