NESTS

T. butter, melted
5 T. maple syrup
12 slices white bread, crusts removed
6 slices of fried bacon, crumbled
Salt & pepper to taste
1 pkg. Hollandaise sauce
Pre-heat oven
to 400 degrees. Grease 12 large muffin cups. Melt butter and add
syrup. Flatten bread slices with a rolling pin, then brush both
sides with the butter mixture. Mold one bread slice into each muffin
cup, being careful to leave a “lip” over the edge.
Sprinkle crumbled
bacon into each bread-lined cup, reserving some for top of each
egg. Break an egg into each cup, sprinkle with salt & pepper
and top with remaining bacon. Bake about 15 minutes or until eggs
are cooked to the desired doneness.
While nests
are baking, whip up your package of Hollandaise. Run a knife around
sides of muffin cups to loosen toast nest. To serve simply drizzle
sauce on plate and place two nests on top. Serve with Hashbrowns
for a Crowd.
