Apple
Cream Cheese Pie
Crust
2
½ cups flour
3 T. sugar
1 cup shortening
1 t. salt
1 egg
2/3 cup milk
To make crust,
sift flour, sugar & salt together; cut in shortening. Combine
egg and milk and stir into flour mixture.
Roll out half
the dough between two sheets of waxed paper to fit a jellyroll pan.
Reserve the other half to top dessert.
Pour prepared
apple filling over crust in pan. Roll out remaining dough and cover
filling. Seal edges well and bake at 375 degrees for 30 minutes.
Coll and frost with Cream Cheese Frosting.
Apple Filling

large apples, peeled, cored and sliced
1 t. ground cinnamon
2 T. quick-cooking tapioca
1 ½ cups sugar
Mix all ingredients
together.

Cheese Frosting
3
oz. cream cheese, softened
1 t. vanilla
6 T. unsalted butter, softened
1 T. cream
1 ¾ cups powdered sugar, sifted
Mix well to
make a smooth frosting. Add more cream if needed. |
