LIME PIE
Graham
cracker crust:
1 cup graham cracker crumbs
¼ cup sugar
¼ cup melted butter
Mix
together and shape into pie plate. Chill.
Filling:
6 egg yolks
21 oz. sweetened condensed milk
¾ cup lime juice
¾ cup whipping cream
¼ cup powdered sugar
1/8 t. vanilla
Whip
the egg yolks until pale and nearly double in bulk. Whisk in condensed
milk then lime juice. Fill the chilled graham cracker crust and
bake at 350 degrees for 10-15 minutes. Cool. Whip cream until stiff,
adding sugar half way through. Top cooled pie and refrigerate.
