MANGO-LIME
PARFAIT
2 - 8 oz. cartons lemon-flavored yogurt
1/3 of an 8 oz. container frozen Cool Whip, thawed
1-2 t. finely shredded lime peel
12 soft coconut macaroon cookies
3 mangoes, peeled and chopped (about 2 cups)
Sliced mangoes and lime peel curls optional for decoration
Fold together
yogurt, whipped topping and lime peel. Coarsely crumble one cookie
into each of 6 parfait glasses. Spoon about 3 heaping T. of yogurt
mixture into each glass on top of cookie. Spoon about 1/3 cup of
the chopped mangoes into each cup. Crumble another cookie into each
and top with remaining yogurt mixture. Cover and chill 1-24 hours.
Garnish with mangoes and lime peel if desired.
