ANGEL’S
APPLE FRITTERS
1 cup
flour
1 t. baking powder
¼ t. cinnamon
2 eggs
½ cup milk
2 apples, chopped (or firm sweet peaches if desired)
Mix dry
ingredients. In a separate bowl, beat eggs, stir in milk &
apples. Combine both mixtures together.
Heat canola or vegetable oil to 375 degrees, about 2 inches
deep in skillet; drop 1 generous tablespoon at a time into
oil. Fry until golden brown, turning over once with tongs.
Drain on paper towel and serve warm, sprinkled with powdered
sugar. Delicious dipped in maple syrup or topped with vanilla
bean ice cream!
