Green Salad with Peach Cream Dressing
Choose salad fixins as you prefer:
Boston (or Butter) lettuce, Curly endive, Watercress, well
drained mandarin oranges, dried cranberries
sliced fresh strawberries. Etc.
Peach Cream salad dressing
Whisk together:
1 cup light mayonnaise
1/4 C plain low fat yogurt
2 Tbsp. honey
1 tsp. lemon juice
1/4 - 1/2 tsp. curry powder
1/8 tsp. ground ginger
¼ cup mashed peaches, mostly drained
Pour
over salad greens and top with pecans.
Honey
Glazed Pecans
4 cups pecan halves
1/4 cup honey
2 teaspoons cinnamon
1 orange, zest grated
Preheat oven to 375 degrees. Toss all the ingredients together
and transfer to greased baking sheet. Bake for 25 minutes
until lightly toasted, stirring occasionally. Cool. Store
in an airtight container.
