small beef cubed steaks
2 eggs, beaten
½ t. salt
1/8 t. pepper
1 cup dry Italian style bread crumbs
1 cup freshly grated Parmesan cheese
¼ cup oil
1 cup tomato sauce
6 thin slices of Mozzarella
2½ freshly grated Parmesan Cheese
Dip cutlets into beaten egg, then into a mixture of salt,
pepper, bread crumbs and 1 cup Parmesan cheese. Saute coated
cutlets in oil, browning lightly on both sides. Cover with
tomato sauce and slices of Mozzarella. Sprinkle with remaining
Parmesan cheese and bake for 15-20 minutes at 350 degrees
until cheese is melted and meat is tender. Serve with buttered
and herbed fettuccini or wide egg noodles.
