Broccoli,
Cheese & Noodle Soup

(10 oz.) pkgs. Frozen chopped broccoli
¾ yellow onion, chopped
3 T. butter
6 chicken bouillon cubes
6 cups water
6 oz. fine egg noodles*
Garlic powder and black pepper to taste
6 cups milk
1 lb. American cheese, grated
Cook
broccoli as package directs; retain liquid and set aside.
In large soup pot or Dutch oven, sauté onion in butter
until tender. Add bouillon cubes and water; bring to boil.
Add fine noodles and cook uncovered 3 minutes. Stir in broccoli
(with liquid) and spices. Cook 3-5 more minutes, add milk
and cheese and stir until cheese melts. If desired serve sprinkled
with chopped parsley or green onions. You might even like
this soup topped with crushed up tortilla chips or some seasoned
and lightly sautéed shredded chicken!!
