Skillet Burgers

½ lbs. lean ground beef
2 medium tomatoes, peeled
¼ cup chopped onion
1½ t. salt
¼ t. pepper
3 T. vegetable oil
1 cup sour cream
1 t. dill seed
¼ t. salt
1 T. chopped fresh parsley
Scoop
center of tomato out into a large bowl; combine with beef,
onion, salt and pepper. Cut remaining tomato into thin strips
and reserve. Shape meat mixture into 6 patties about ¾
inch thick. Brown on both sides in oil; remove patties to
hot platter. Pour off drippings if necessary and stir sour
cream, tomato strips, dill seed (can also use celery seeds
or caraway seeds if preferred) and salt into pan; Cook just
until heated thoroughly and spoon over patties. Sprinkle with
parsley.
