Fall Cranbrosia
2
cups ground cranberries
1 cup sugar
1 small can drained mandarin oranges (save juice)
1 small can drained pineapple chunks (save juice)
1 cup shredded coconut
1 banana, cubed
2 envelopes unflavored gelatin
1 cup sour cream
1 cup whipping cream, whipped
Combine
cranberries and sugar and mix well. Add orange segments, pineapple
chunks, coconut and banana to cranberries.
In
small saucepan, sprinkle gelatin over ¾ cup of reserved
fruit juice to soften. Place over medium heat, stirring constantly
until gelatin is dissolved; add to fruits.
Fold in sour cream and whipped cream; pour into mold and refrigerate.
My
secret tip: Line mold with plastic wrap and when it’s
time to serve just pull the Cranbrosia out – no fuss
and the wrap will peel perfectly off of the salad.
