FRUIT
FILLED SUGAR COOKIE PIE
3 cups flour
1 cup sugar
2 t. baking powder
½ t. baking soda
1 cup Zero Trans Fat shortening
½ cup milk
2 t. vanilla
1 egg
3 cans cherry pie filling (any kind of fruit filling will
be yummy)
In
large bowl, mix flour, sugar, baking powder and soda together;
cut in shortening (or use food processor) until you have a
sandy consistency; pour into large bowl. Measure ½
cup milk into a 2 cup measuring cup, add vanilla and egg and
whisk together. Mix wet ingredients into dry ingredients just
until well blended.
Lightly
grease and flour half sheet pan (approx. 18x13x1) and pat
2/3rds of the dough into the bottom. Evenly spread pie filling
over top of dough. Pull small pieces from remaining third
of dough and sprinkle evenly over top of filling. Sprinkle
with cinnamon sugar if desired.
Bake at 350 degrees for 50 minutes. Chill.
Once
cooled you can also drizzle this cookie pie with powdered
sugar icing for extra sweetness.
Powdered Sugar Icing:
1 cup sifted powdered sugar
1 t. vanilla
Enough water (or milk) for consistency
Mix
until smooth. |
