This breakfast serves a dozen friends – but it halves
easily to feed 6. Warm corn or flour tortillas and salsa complete
the dish!

dozen eggs, beaten
½ pint sour cream
1 lb. cubed ham
1 can (32 oz.) tomato pieces, well drained
1 green pepper, chopped
1 small onion, chopped
½ lb. cheese, grated
1 stick butter, melted
¼ t. salt
1/8 t. ground pepper
Mix all ingredients together in a large bowl and transfer
to a 4 quart casserole dish. Bake at 350 degrees for 50 minutes.
Variation:
Switch tomato pieces with 2 (4 oz.) cans chopped green chiles
and replace the chopped green bell pepper with a red one.
