HUNTERS
STYLE CHICKEN
Ingredients:
4 lb. chicken, cut in pieces
4 T. olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 t. salt
½ t. fresh ground black pepper
¼ t. oregano
1 small can tomato sauce
1 can mushroom gravy
½ c. dry red wine
2 bell peppers, cut into pieces
1 small hot pepper
1 cup sliced mushrooms
2 T. minced parsley
In
a heavy pan brown the chicken in the olive oil. Drain chicken
on paper towels. Sauté onion and garlic in the same
pan; add salt, pepper and oregano. Return chicken to the pan.
Whisk tomato sauce, mushroom gravy and wine together and pour
over chicken. Mix well and simmer, covered, for 30 minutes.
Mix in green pepper, hot pepper, mushrooms and parsley; cook
20 minutes longer or until tender. Serve over rice, mashed
potatoes or polenta.
