TOASTED
COCONUT MOUSSE PIE
1-1/2 cups finely crushed chocolate cookies (without frosting!)
2 T. sugar
1/3 cup melted butter
2 cups whipping cream
1/3 cup powdered sugar
1 t. vanilla
1 cup coconut (toasted)
2 egg whites, beaten until stiff
Mix crushed cookie crumbs and sugar. Add butter and blend
thoroughly. Take a small amount of crumb mixture out to sprinkle
on top of pie – press remaining mixture into pie pan
and set aside. Whip cream. Fold in powdered sugar, vanilla,
coconut, and beaten egg whites. Pour mixture into pie shell
and top with leftover crumbs. Freeze overnight or until firm.
You
can also use this recipe to create a Coconut Mousse Parfait!
Just layer your crumb crust dough with the mousse inside an
appropriate glass. |
