WILD
RICE SALAD
1
cup uncooked wild rice
2 apples, chopped
Juice of 1 lemon
1 cup golden raisins
1 cup seedless red grapes, halved
2 T. minced fresh mint
2 T. minced fresh parsley
2 T. chopped fresh chives
1 cup pecan halves
¼ cup oil
1/3 cup orange juice
2 T. honey
Cook
rice according to directions and drain; set aside to cool.
In a large salad bowl, toss apples with lemon juice. Mix in
raisins, grapes, mint, parsley, chives and rice. In a separate
bowl, whisk oil, orange juice and honey together; pour over
rice salad and mix well. Chill. Before serving toss pecans
with salad.
