Than Steak Casserole

packages frozen chopped spinach
1 cup sour cream
1 cup each, grated Cheddar cheese and Jack cheese, divided
½ cup grated Parmesan cheese
¼ cup chopped green onion tops
1 t. Italian herb seasoning
1 pound ground beef
¼ chopped green onion
Salt and Pepper to taste
20-25 fresh button mushrooms
Nutmeg
Thaw spinach
and squeeze dry. Mix with sour cream, ½ cup Cheddar, ½
cup Jack, Parmesan, onion tops and seasoning.
Clean mushrooms. Chop stems and reserve.
Sauté ground beef with green onions, salt, pepper and chopped
mushroom stems.
Place mushroom
caps, cut side up, in center of a large shallow baking dish. Spoon
spinach mixture around edges. Spoon meat mixture over mushrooms.
Sprinkle top with remaining cheeses and nutmeg. Bake at 350 degrees
for 30 minutes or until hot and cheese is melted.
