CORNBREAD
SUPPER
Serves 6
1
lb ground beef (or pork)
½ cup chopped onion
1 (12 oz.) can whole kernel corn with red and green peppers, drained
1 (8 oz.) jar Cheez Whiz, divided
1 (4 oz.) can chopped green chilies
¾ cup cornmeal
¾ cup flour
2 t. baking powder
2/3 cup milk
¼ cup margarine
1 egg
Brown meat in
10 inch oven-proof skillet. Add onion; cook until tender. Stir in
corn, ½ cup Cheez Whiz and chilies. Combine dry ingredients;
add milk, margarine, egg until just moistened and stir in remaining
Cheez Whiz. Spread over meat mixture in skillet and bake at 400
degrees for 20-25 minutes until golden brown. Let stand 5 minutes
before serving. |
