Maple
Spring Chicken

chicken
1 tsp. salt
2 1/2 - 3 lbs., cut up dash of pepper 1/4 cup melted butter
1/4 cup chop. almonds
1/2 cup maple syrup
2 tsp. lemon juice
1/2 tsp. grated lemon rind
Place chicken
pieces in a shallow, buttered baking dish. Mix remaining ingredients
and pour evenly over chicken. Bake uncovered, 50-60 minutes at 325
degrees. Baste occasionally. This baked chicken is especially good
served with rice. |
