Pork Chops
1/3 to 1/2 cup heavy pulp orange juice
3 cloves fresh garlic
1/3 small onion, very finely chopped
1/4 t. powdered ginger
2 T. butter
Salt and Pepper to taste
Trim fat from
chops. I like to use butterfly chops when they're on sale! Pour
orange juice into small bowl, press garlic into juice then add onions,
ginger and a pinch of pepper; stir well. Place chops in shallow
dish and cover with marinade. Let stand for at least 45 minutes.
Melt butter
in skillet, remove chops from marinade and brown chops on both sides.
Pour marinade back into the skillet and cook covered for about 10
minutes. Remove cover and cook until fork tender. Add more salt
and pepper to taste and serve. |
