SUNDAY SPECIAL MEATLOAF
Serves 6

1-1/2 lbs hamburger
¼ t. pepper
1-1/2 t. salt
½ onion, finely chopped
1 egg, slightly beaten
2 T. evaporated milk
½ cup soft bread crumbs

Mix meat, seasonings and onion. Add eggs, milk and crumbs to meat and mix well. Roll onto sheet of wax paper with a wet rolling pin to about ½ inch thickness. Spread with Savory Dressing. Roll like a jelly roll and place in baking pan. Bake at 350 degrees for 1 hour. Serve with a nice mushroom beef gravy.

SAVORY DRESSING

¼ cup butter
¼ cup finely chopped celery with leaves
½ onion, finely chopped
3 T. parsley flakes
3 cups soft bread crumbs
¾ t. salt
½ t. poultry seasoning
1/8 t. pepper
1 T. water

Melt butter in skillet. Add onion, celery and parsley. Cook slowly for 5 minutes. Mix with crumbs, seasonings and water.
