TACO STUFFED
PASTA SHELLS
Serves 6-8
1-1/2 pounds ground beef
1 (3 oz.) package cream cheese at room temperature, cubed
1-1/2 t. seasoning salt
2 t. cayenne
18 jumbo pasta shells, cooked-rinsed-drained
2 T. butter, melted
1 cup taco sauce
2 cups shredded Cheddar
1 cup crushed tortillas
Sprinkling of chopped green onions
Sour cream and salsa
Pre-heat oven
to 350 degrees. Brown ground beef; drain and add cream cheese, salt
and cayenne then simmer for 8-10 minutes. Toss precooked pasta shells
with melted butter and fill with meat mixture. Place shells in buttered
9x13 baking pan, pour taco sauce over the top, cover with foil and
bake for 15-20 minutes. Uncover and top with onions, tortilla chips
and cheese. Bake for about 10 more minutes or until cheese is melted.
Serve with sour cream and salsa. These look great on a bed of shredded
lettuce and a few chopped tomatoes. They also re-heat well in the
microwave!
