CHICKEN SALAD
2 cups mayonnaise
1 TBS curry powder
2&1/2 TBS soy sauce
2 TBS fresh squeezed lemon juice
salt to taste
1 TBS fine chopped green onion
1 TBS chutney (Crosse & Blackwell’s) or (Sharwood’s
Major Grey Mango Chutney)
Mix
all ingredients and add

cups cooked chicken breast (cubed) (*season with lemon pepper before
cooking)
1 8oz. can sliced water chestnuts (well drained)
1 20oz. can pineapple chunks (well drained)
1/2 pound sweet seedless grapes
1 cup chopped celery
Toss well. Chill
several hours or overnight. Serve on Bibb lettuce.
