CHICKEN PASTA
SALAD
Serves 6-8
12
oz. package seashell pasta
2 cups cooked and shredded chicken breast
2 cups chopped Roma tomato
½ cup diced celery
¼ cup minced red onion
¼ cup chopped parsley
1 T. olive oil
1½ t. dried dill weed
1½ T. red wine vinegar
2 t. grated Parmesan
2 garlic cloves, minced
Salt & pepper to taste
Cook pasta in
boiling water until almost done. Let cool.
Combine pasta,
chicken, tomato, celery, onion & parsley in a large bowl; set
aside. Blend remaining ingredients well to create dressing. Pour
dressing over pasta mixture and blend gently; cover & chill
for 2 hours. |
