CONFETTI
RICE SALAD
CREAMY
SPICE DRESSING
1/3
cup sour cream
1/3 cup mayonnaise
3 T. buttermilk
1 t. lemon juice
½ clove garlic, minced extra fine
2 dashes Worcestershire sauce
3 t. combination of minced shallots, minced chives and minced parsley
1 t. Dijon or spicy mustard
1 t. thyme
1 t. sugar or Splenda
1 t. finely chopped jalapeno peppers
Blend all ingredients
together. Chill.

cup fried & crumbled bacon
2 cups rice, cooked and cooled
½ cup ham, cubed and sautéed
¾ cup chicken, shredded and sautéed
1 large tomato, diced and drained
½ cup celery, diced small
¼ cup onion, chopped
½ cup green pepper
Fry bacon until
crisp. Crumble and set aside. Saute chicken and ham in same pan
until lightly browned. Meanwhile combine rice, tomato, celery, onion
and green pepper. Stir in dressing, then toss in chicken and ham.
Chill (or not!) and sprinkle crumbled bacon over all before serving.
