GRILLED
STEAK SALAD
Trim fat from
about a half pound of lean flank steak. Sprinkle ¼ t. salt
over steak. Prepare grill & cook steaks for about 5 minutes
on each side until steak is medium rare or to the desired doneness.
Cut steak diagonally across the grain into thin slices and cut each
slice in half crosswise.
Mix the following in a large bowl:

Grilled steak slices
8 cups chopped iceberg lettuce
1 and a half cups of seedless red grapes, halved
1 cup thinkly sliced red onion, separated into rings
1 cup cherry tomatoes, halved
1 cup peeled, thinly sliced cucumber (about 1 medium)
2 T. capers
Make dressing
by whisking together.

T. minced fresh tarragon
1/4 t. salt
6 T. red wine vinegar
3 T. Dijon mustard
2 t. extra-virgin olive oil
1-1/2 t. honey
Pour dressing
over large bowl of salad and toss gently to coat. Serve.
