HONEYDEW
AND APPLE SALAD
1/2 medium honeydew, peeled, seeded & cut into thin slices
2 medium tart apples, cored & cut into bite size pieces
2 medium peaches, pitted and cut into strips
1 cup red raspberries
2 T. vanilla yogurt (yes, you can use low-fat if you’d like)
2 T. apricot jam
1 T. mango chutney
In a large bowl
combine all fruit EXCEPT RASPBERRIES. Make dressing by combining
yogurt, jam & chutney. Add dressing to fruit mixture, toss to
coat. Add raspberries to chilled salad just before serving, being
careful not to break. You can even sprinkle the raspberries on top
of salad when served. |
