WILD
RICE SALAD
1 cup uncooked wild rice blend
2 apples, chopped
juice of 1 lemon
1 cup golden raisins
1 cup seedless red grapes, halved
2 T. minced fresh mint
2 T. minced fresh parsley
2 T. chopped fresh chives
1 cup pecan halves
Cook rice according
to directions and drain, allowing to cool. In a large salad bowl,
toss apples with lemon juice. Add raisins, grapes, fresh herbs and
rice. make dressing.
¼ cup oil
1/3 cup orange juice
2 T. honey
Whisk together.
Pour over cooled wild rice mixture and season with salt and pepper
to taste. Chill. Before serving toss pecans with salad. |
